Job Description

Job Title: Head Sushi Chef

Concept Type: High-End Fine Dining / Sushi Bar

Location: Boston, MA

Salary: $100,000 - $120,000 per year

Join a celebrated fine dining destination in Boston, MA, where culinary excellence and genuine hospitality come together to create unforgettable guest experiences. As the organization expands its footprint with two exciting new concepts on the horizon, it continues to build a culture rooted in creativity, collaboration, and craftsmanship. Team members are encouraged to bring bold ideas to the table, grow within a supportive leadership structure, and take ownership of their craft. This is a rare opportunity to join a team that values innovation as much as tradition, and that invests deeply in the people who make its vision possible.

This organization is now seeking a talented Head Sushi Chef to lead the launch of a brand-new sushi program in Boston, MA, bringing a premium, live-preparation experience to an underutilized raw bar space within one of the city's most respected fine dining establishments.

Job Qualifications:

  • 5+ years of experience in sushi preparation, with at least 2 years in a leadership or head chef role
  • In-depth knowledge of sushi ingredients, techniques, and traditional Japanese knife skills
  • Strong understanding of food safety, sanitation, and kitchen management standards
  • Proven ability to design and specify kitchen equipment and layout for a live sushi bar concept
  • Experience in high-volume or fine dining kitchens strongly preferred
  • Culinary degree preferred, but not required with equivalent hands-on experience
  • Exceptional leadership, communication, and team-building skills
  • Creativity in menu design and plate presentation
  • Meticulous attention to detail and unwavering commitment to quality standards
  • Comfortable working in a guest-facing, live-preparation environment
Job Responsibilities:

As the Head Sushi Chef in Boston, MA, you will:
  • Design and execute a focused, high-quality sushi menu featuring rolls, sashimi, and nigiri aligned with a premium fine dining brand
  • Lead the redevelopment of the downstairs raw bar into a fully functioning, live sushi bar, including equipment specification and layout planning
  • Recruit, hire, and train a small, skilled sushi team from the ground up
  • Prepare and present sushi using proper knife skills and authentic Japanese culinary techniques
  • Inspect and manage the quality and freshness of fish, rice, and other key ingredients
  • Oversee inventory management, vendor relationships, and cost controls for sushi-grade products
  • Maintain full compliance with health department regulations and food safety standards
  • Foster a collaborative, high-performance kitchen culture among sushi staff and apprentices
  • Engage with guests at the bar, creating an interactive and memorable dining experience
  • Partner with ownership and operations teams to establish sustainable staffing and service models
Company Benefits:
  • Competitive salary with performance-based incentives
  • Health and dental insurance
  • Opportunity to build and lead a brand-new culinary program from the ground up
  • Creative ownership over menu direction and kitchen design
  • Collaborative, growth-oriented culture across multiple concepts
  • Long-term career growth potential within an expanding restaurant group

This Head Sushi Chef opportunity in Boston, MA, is ideal for a culinary leader ready to step out of a supporting role and into full creative and operational ownership of a brand-new concept. If you are a sous chef ready to lead, or an established sushi professional looking for your next challenge, this Boston, MA role offers the platform to make your mark.
